    White mushroom. Ready for the pan without cooking.
     
  Pileus The cap is 512 cm in diameter, white or light cream, turning yellow ochre when damaged. The surface is dry, globular or egg-like at first, flattening out with maternity. The flesh is thick, white, staining slowly yellow when bruised.
     
  Lamellae The gills are close, free, at first pinkish, almost white, then light grey-lilac and finally dark lilac-brown, almost black.
     
  Stipe The long and slim stem is concolourous with the cap and it is easily removed from the cap. There is a big drooping double ring underneath the cap. The base is usually bulbous.
     
  Odour and taste Smells of anise or of bitter almond. Taste is mild.
     
  Habitat The Wood Mushroom  is found in deciduous woodland and in groves, often together with fir trees and blueberries. Do not pick them near traffic as they gather up poisonous heavy metals.
     
  NB. Be sure to distinguish the Field Mushroom from Amanita virosa Destroying Angel which is also a white mushroom but morbidly toxic,  one of the most toxic of all known toadstools.
